I just made a dish I like to call Clean-Out-The-Fridge Quiche. It involves a frozen pie crust, all the frozen and fresh vegetables and cheese you can find in your fridge, and some egg substitute. (I prefer egg substitute to regular eggs because otherwise I always end up beating too many eggs and throwing out the extra.) Bake at about 350 until eggs are solid, about 45 min.Mine had a crazy hodgepodge of veggies, everything from edamame to carrots. I was doubtful, but it's delish! And saves me from buying an egg sandwich at Dunkin Donuts in the morning...

My clean out the fridge concoction also involves pie crust! As a matter of fact, I just picked up a double crust at Fresh Market in anticipation of my left-over fave chicken pot pie.
I take leftover chicken, a can a of fat-free cream of whatever soup, and a bag of frozen stew veggies; my favorite is from Winn-Dixie - it has peas, carrots and potatoes. I add pearl onions (unless it comes in that frozen mixture...). Mix it all together with a little flour and put it in a pie-crust lined dish.
I pop a pie crust on the top, poke a fork in it, bake it till it's done and voila. I look like a pro.

I will have to try the pie crust idea now that my fiance and I are living together.
I would take my left over veggies, chop them fine & warm in fryng pan - non stick of course
While they warm up I would beat a couple of eggs & milk together and add some seasonings.
Then pour that over top of the veggies.
I would either leave it to set like an omelette or stir as scrmbled eggs - and just add a small amount of cheese on top
